One night last week, I wanted a potato dish to go with the rest of the meal I was preparing.  Scalloped potatoes sounded good so I looked in one of my “quick and easy” cookbooks and found this casserole that is very similar to scalloped potatoes but was quicker to prepare and cook.  We thought they were delicious and I think you will too.
