Cookin with The Columns: Asparagus, anyone?
Asparagus is my favorite springtime vegetable. My mother-in-law used to have an asparagus bed, but I have never tried to grow asparagus. Sam’s grows my asparagus for me and I love it best when it’s just steamed and crunchy. But this casserole is similar to one my mother used to make. It is in the Easy Livin’ cookbook, contributed by Mary Louise Gregory. If you don’t have an Easy Livin’ cookbook from TIL (now Tunica Academy), you need to get one! I think 1251 Place and The Levee Shack both have them for sale.
