Last week Evelyn McLean asked me to make a casserole for her, using a recipe she had found online at the Food Network website.  It’s one of Emeril Lagasse’s recipes and they are always good.  So I put it together for her this weekend and it looked so delicious, I wanted to go home with her and eat some of it!  But I guess instead I will just have to make it for my family myself. 
It’s similar to a recipe that I have used a lot that is called Mashed Potato Casserole.
