The Salt of the Earth
Up north, where I come from, salt has two functions. The first is the same as anywhere else in the world—to season food. Like most of us, I probably use too much, having gotten used to salty food early in life. I am trying to cut down, but it isn’t easy.
One of the worst times in my life for food was the few days I was in the hospital following a heart attack. I was on a bland diet (of course) with no salt at all. The food tasted terrible. I ate only because I knew I had to; but I was glad to get out and get home to something more palatable. Food without any salt at all seems hardly worth eating.
