I know, it’s almost summer.  But this salad sounded so cool and refreshing that I think it might also be a “summer salad”.  
I’m not a really big fan of jello salads, but when they have so much good stuff in them, the jello really doesn’t do much but hold it all together.  
This one comes from a cookbook that my best friend’s church put together in Morristown, Tenn.  You can always read through church cookbooks and find the best cooks in the church because they put the most recipes in the book and they always sound good!
