Cookin with The Columns: A tasty breakfast
As you might guess, I am always on the lookout for new breakfast ideas, since we have many repeat guests at our bed and breakfast and I don’t want to serve them the same things over and over. I got this new recipe out of a magazine recently and it is really quick, easy and delicious. It’s also fairly nutritious with the bananas and oatmeal in it. I think your kids will really like them too because they don’t look a lot different than the usual pancake.
2 cups COMPLETE pancake mix (the kind that only needs water added)
1 1/3 cups water
1/2 cup uncooked quick oatmeal
1 ripe banana, mashed
1/4 cup chopped pecans
Stir pancake mix with water until smooth. Add oatmeal, banana, and pecans. Cook pancakes on a greased, heated griddle until golden brown on both sides. Serve hot with syrup and butter.
