The Mississippi Bed and Breakfast Association is in the process of doing a cookbook to be published by the fall. I have been looking through cookbooks from other B&B associations to get ideas for our book. 
This is a recipe I have used from the Bed and Breakfast Association of Arkansas cookbook that I bought several years ago.  It makes a lot of muffins, but you can freeze them and heat them up in the microwave later.
