Last week was Brooks’ birthday. Her favorite cake is carrot cake so I made one for her birthday and we ate some during the day at work and then she took the rest home with her. This carrot cake recipe is a really simple one that doesn’t involve all the carrot grating that I did for her cake. But it gives you the same taste as a carrot cake without all the work. Quick and easy!
