Cookin' with The Columns: Brownies, anyone
The snow this week has me looking for warm things to eat. Soup, hot chocolate, anything to warm me up. Just looking out the window makes me cold! This warm brownie pie is a good one to eat on a cold winter day. It would also be a good recipe to save for Valentine’s Day. Seems like chocolate is always a good dessert for that special day. So stay inside this week and treat yourself to a decadent dessert!

WARM BROWNIE PIE with
SINFUL CHOCOLATE SAUCE
4 oz. sweet chocolate
¼ cup butter
¾ cup sugar
2 large eggs
1 tsp vanilla extract
½ cup all purpose flour
½ cup chopped pecans
Ice cream
Chocolate sauce (recipe follows)
Pie crust (optional)
Microwave chocolate and butter in large bowl on high for two minutes; stir until chocolate is melted, then add sugar, stirring well. Add eggs and vanilla to chocolate mixture; stir well. Add flour and pecans and stir well. Pour filling into a greased and floured 9 inch pie plate or pie crust (I use pie crust).
Bake at 350 degrees for 25 minutes or until a wooden pick inserted at the center comes out with crumbs. Don’t overbake. Serve warm with ice cream and chocolate sauce.
(I use purchased caramel sauce, but this chocolate sauce is yummy.)
CHOCOLATE SAUCE
2 oz. sweet chocolate
1/3 cup water
½ cup sugar
3 tbsp. butter
¼ tsp. vanilla extract
Microwave chocolate and water on high for 1 ½ minutes; stir until chocolate is melted. Add sugar and microwave for 1 minute; stir. Microwave for another 2 minutes, then stir in butter and vanilla. (Watch carefully because mixture might boil over.)
